2 pounds ground venison

2 medium yellow onions, chopped

4 garlic cloves, minced

2 tablespoons unsalted butter

1 tablespoon extra-virgin olive oil

One 28-ounce can diced tomatoes (and their juices)

One 15-ounce can tomato sauce

One 6-ounce can tomato paste

One 16-ounce can light red kidney beans, drained and rinsed

One 16-ounce can dark red kidney beans, drained and rinsed

One 16-ounce can pinto beans or Great Northern beans, drained and rinsed

SEASONINGS

3 tablespoons ground cumin

2 tablespoons chili powder

1 tablespoon Montreal Steak seasoning

1 teaspoon dried oregano

1 teaspoon paprika

½ teaspoon cayenne pepper

Salt and freshly ground black pepper, to taste
